Lentil Soup

Ingredients
1 tbsp vegetable or coconut oil
65 grams onions, chopped
65 grams carrots, chopped
2 garlic cloves, minced
190 grams red lentils
3 cups water
1/8 tsp black pepper
1/4 tsp mandarin-rosemary sea salt (or more to taste)
1/2 tsp ground turmeric
1/2 tsp ground cumin
1/2 tsp lemon juice
Parsley, chopped (for garnish)
Method
Heat vegetable/coconut oil in a large pot. Add chopped onions, carrots, garlic and cook for 2-3 minutes, until softened, stirring frequently.
Add in the black pepper, mandarin-rosemary sea salt, ground turmeric and ground cumin and cook for 30 seconds.
Add red lentils and water, stir to combine. Bring to a boil, reduce heat and simmer for between 20 - 25 minutes, until the lentils are cooked.
Add more salt and pepper (if needed) after tasting. Mix lemon juice and garnish with chopped parsley.
