Greek Salad

Ingredients

  • 1/2 medium red onion, thinly sliced

  • 1/2 bell pepper (red/green or yellow), chopped into 2 cm cubes

  • 250 grams cherry tomatoes, halved

  • 1 Cucumber (Japanese/English), chopped into 2 cm cubes

  • 1 Avocado, peeled, pitted, and sliced

  • 250 grams black olives, sliced into halves

  • 120 grams feta cheese

  • Greek Dressing

  • 3 Tbsp Extra Virgin Olive Oil

  • 3 Tbsp Lemon Juice

  • 1 garlic clove, minced

  • 1/2 tsp Basil sea salt

  • 1/4 tsp black pepper


Method


Rinse all vegetables and chop/slice accordingly. Add all salad ingredients to a bowl.


Whisk Greek Dressing ingredients in a bowl or combine Greek dressing ingredients in a Mason jar and shake.


Just before serving, drizzle Greek Dressing over salad. Toss to combine and taste.
