Garlic Prawns (or Shrimps) Pesto Pasta

250 grams prawns or shrimps, peeled and deveined
240 grams spaghetti/linguini or GF pasta
200 grams With Love Spices and Herbs Basil Pesto
1 Tbsp Olive Oil
3 garlic cloves, minced
125 grams cherry tomatoes, halved, for garnish
Basil leaves, chopped, for garnish
1/2 Lemon, juice squeezed (optional)
Red Pesto Sea Salt or Garlic-Infused Sea Salt, to taste
Black Pepper, to taste
Parmesan Cheese, grated, to taste
Season prawns with Red Pesto Sea Salt or Garlic-Infused Sea Salt and Black Pepper and set aside. Bring a large pot of water to boil, add salt and olive oil and cook pasta according to packet instructions.
Meantime, heat a skillet at medium-high heat, add 1 Tbsp Olive Oil. Once the oil has been slightly heated, add the minced garlic and saute for 1 minute.
Once the minced garlic is fragrant, add the Basil pesto and saute for another minute. Add the prawns (or shrimps) and saute for 4-5 minutes on each side until they are fully cooked through. Add lemon juice if using.
Strain the pasta and leave aside 2 Tbsp of pasta water. Add the cooked pasta back to the pot with the Garlic-Pesto mixture and 2 Tbsp of Pasta water. Mix thoroughly and add cherry tomatoes, basil leaves, Parmesan cheese and season if required.
